Tatachilla has been a part of McLaren Vale since vines were first planted over 100 years ago. Tatachilla’s flagship, Foundation Shiraz represents a commitment to excellence in both viticulture and winemaking. Selecting the passionately grown grapes from low yielding Shiraz vineyard in Clarendon, Foundation Shiraz epitomizes the richness of superbly ripened McLaren Vale fruit.
The dirt it’s grown in a single Vineyard expression sourced from our home in Clarendon the cooler sub-region situated in the Northern slopes McLaren Vale. The soil is a very shallow clay loam containing shale rock fragments and quartz gravel which enhances drainage.
The way we make it Shorter but more frequent pumpovers were used for gentle extraction of colour and tannin while maintaining the temperature at 24˚C. Extended time on skins is applied to build on the structure and teaxture. Malolactic fermentation and Maturation was completed in a combination of new and second use French oak barrels, adding complexity and highlighting the delicious forest fruit characters of McLaren Vale Shiraz.
