This sparkling wine combines the classic flavours of 80% Chardonnay and 20% Pinot Noir yielding caramel, pear and bready flavours with subtle floral scents. This wine closes beautifully with a subtle richness, balanced palate and crisp finish. Complex and fresh with a gorgeous rose hue from the Pinot component. Lovely as an aperitif or the perfect accompaniment to any joyful occasion.
Vineyard Notes
A blend of 80% Chardonnay and 20% Pinot Noir wines, on average 4 years. The fruit at the beginning of each vintage, in late February early March, within a 10.5 - 11.5 Be° range.
Production Notes
Of the total blend, 26% was matured in older barrels (approximately 6 years old) to develop the pleasing toasty and nutty flavours and to add texture and complexity on both palate and nose. Once re-blended with the current vintage wine, final fermentation was undertaken and the wine bottled.
Winemaker Notes
Enticing sweet pear, quince and light caramel notes accompanied by a fine mousse. A subtle creamy and yeasty texture adds richness, balance and complexity to the fresh, lingering finish.
Food Pairing Notes
A stunning appetiser and perfect with most seafoods, vegetarian and poulty dishes. Also ideal with fruit desserts.
